As a young professional, it’s important to have some go-to lunches that are easy to pack for work. While I already had a few of these in my arsenal, I wanted to broaden my horizons in order to avoid the inevitable disenchantment and blasé that would result from bringing PB&J (or SB&J*) or turkey every day. After a bit of mixing and matching, the perfect concoction was born, one which solves this problem deliciously.
*SB&J = Sun butter and jelly
- Any kind of bread
- 2 packets of tuna
- 1 avocado
- Garlic powder
- 1 slice of cheese
- In a bowl, combine the tuna (make sure to drain it first), avocado, salt, and garlic powder.
- Scoop this mixture onto one slice of bread.
- Top with a slice of cheese and the second slice of bread.
